Enzim Lipase: Peran dan Aplikasinya dalam Industri Pangan

Abstract
Lipase enzymes are essential biocatalysts with significant roles in various industries, particularly in the food industry. Lipase is utilized in accelerating cheese ripening, lecithin modification, egg yolk processing, vegetable oil refining, and other food production applications. Moreover, this enzyme plays a crucial role in the manufacturing of functional foods and nutraceuticals, which are increasingly gaining consumer interest. Advances in genetic engineering and recombinant DNA technology have further enhanced the production of lipase, derived from microorganisms, plants, and animals, leading to improved enzyme stability and activity. This review article discusses the roles, sources, characteristics, and applications of lipase enzymes in the food industry based on recent literature. Lipase contributes not only to improving product quality and production efficiency but also to fostering healthier and more sustainable food innovations.
